What makes birria special
Birria isn’t fast food — it’s patience. We braise the beef low and slow with dried chiles and spices until it’s tender enough to pull apart with a fork, then serve it with a cup of its own consomé: the liquid gold that collects during the braise. Dip, bite, repeat. That’s the ritual.
Quesabirria: the crispy, cheesy star
If you only try one thing, make it the quesabirria. We fill a fresh tortilla with birria and melted cheese, griddle it until the edges go crisp, and stain it with that deep-red chile fat. Dunk it in the consomé and you’ll understand the hype. It’s messy, it’s rich, and it’s exactly right.
